L'Assenzio Kubler attinge a una storia ricca di tradizione. Nel 1863, l'azienda familiare situata a Val-de-Travers, nel Giura di Neuchâtel, distillò il suo primo assenzio.
Yves Kubler, pronipote del fondatore della distilleria Kübler, ha ripreso la produzione di assenzio il 10 ottobre 2001, risvegliando così lo spirito di questa storica bevanda.
Il suo aroma dolcemente gradevole e il gusto delicato si concludono con un retrogusto persistente e robusto di assenzio. L'Assenzio Kubler rivela il suo gusto unico e la caratteristica torbidità quando diluito con acqua fresca in un rapporto da 1:3 a 1:5.
Per la produzione, vengono utilizzate principalmente erbe provenienti da Val de Travers – anice verde, anice stellato, finocchio, melissa, issopo, coriandolo e altre ancora... L'ingrediente più importante, tuttavia, è l'assenzio, coltivato nuovamente in Val de Travers da due anni. Si può dire che questo assenzio garantisce che l'aroma dell'Assenzio Kübler di oggi corrisponda a quello conosciuto prima del divieto dell'assenzio.
