Absinthe La Brune is a limited edition absinthe of 60 bottles, developed and produced by Stefano Rossoni and inspired by the Bourbon tradition. In fact, like Bourbons, it is aged in a new toasted American oak barrel. This differs from other barrel-aged absinthes which usually use barrels previously used for other spirits, reused for absinthe, or otherwise not made with American oak. La Brune is a new project so it is not part of the line that includes L'Italienne, La Grenouille and La Montagneuse. The notes of toasted American oak are at the forefront, supported by the holy trinity of anise, absinthe and fennel and by delicate herbaceous notes with a color aimed at bringing out the barrel notes without covering them. With La Brune Stefano wanted to create an extremely versatile barrel-aged absinthe: although it is recommended to consume it diluted with ice water as usual for any authentic absinthe, La Brune can be sipped on the rocks like other barrel-aged absinthes or used in cocktails instead of Bourbon to create variations with a unique character. Absinthe Jade Terminus Oxygénée
Absinthe Jade Terminus Oxygénée stands out from other absinthes for having been subjected to a specialized process of hot oxygenation, after dilution with water it increases the brilliance and the green shades tending towards yellow. The process was designed to render the absinthe free of potentially deleterious properties. Made from Chenin Blanc wine brandy, Terminus Oxygénée is a traditional absinthe Jade Liqueurs produced according to the original production method used in the 11th century. It is produced using a blend of selected herbs, including artemisia absinthium (the plant from which the name "absinthe" derives), and is aged in oak barrels for at least a year before being bottled. Terminus Oxygénée is known for having an intense, complex flavor and a high alcohol content. Creamy and dense on the palate, where the artemisia gives sensational notes and aromas, the tasting ends with a pleasant minty sensation. This product recalls the recipes of the most classic historical absinthes, but with modern nuances. Absinthe The Solidarity Lynx
La Lynx Absinthe is the result of a collaboration between the Aymonier Distilleries and the SFEPM (French Society for the Study and Protection of Mammals). Absinthe the Lynx recalls the wild tones of the flora of the Jura undergrowth where the lynx usually hides. For each bottle purchased, the distillery will donate €10 to the association to promote the protection of the northern lynx. Absinthe with 45% alcohol content is distilled from wormwood plants grown at an altitude of 1,100 meters, it is an original green absinthe recipe with strong notes of green anise and herbaceous, sweet tones. This absinthe is drunk with 3 or 4 volumes of very cold water, with or without sugar, as an aperitif. Butterfly Absinthe was created from the recipe of American absinthe produced in Boston before prohibition in the early 1900s. It is through the unusual partnership of an American absinthe enthusiast and our distillery that it has been brought back to life. Indeed, Brian Fernald, of Boston, managed to find a goldmine of documents, including annotated recipe books. Following these discoveries, he began searching for a distillery to bring this Butterfly absinthe back to life. Absinthe Butterfly is characterized by its power and its complex aromatic variety, focused in particular on citrus fruits and spices. We therefore find in particular notes of lemons, mandarins or even mint. If its profile is exotic, it still leaves a significant place for the Val-de-Travers absinthe plant.
