The correct way to proceed with the traditional absinthe ritual with the Globe Absinthe Fountain is to pour 3 oz of absinthe into a glass, then place an absinthe spoon on the glass and a sugar cube on the spoon (using sugar is not obligatory). The lid of the fountain is removed and fresh water and ice cubes are added to the glass bowl. You turn the tap slightly and ice water flows slowly from the fountain onto the sugar cube. The cold sugar water then drips from the spoon into the absinthe glass, releasing oils and perfuming the air with fennel, wormwood and anise. The combination also begins to take on a milky white color when the water mixes with the aniseed. Refresh the water before each use.
