Romans 55 absinthe was launched in 2019, you can find some of the last remaining bottles on our site, Romans 55 is a new edition of the 19th century French Roman absinthe. This exceptional absinthe is produced in the Golan Heights, Israel. David Zibell, owner and Master Distiller, manages the Golani Spirits distillery. Romans 55 is an authentic reproduction of the 19th century French absinthe Romans. Like the original, the new Romans 55 edition impresses with its complexity: liquorice aromas combine with floral and caramel notes. Absinthe is pleasantly smooth, without any alcoholic harshness, but its taste is aromatic and strong. This is also noticeable in the louche when adding water. It's definitely thick and changes the initial amber hue of Absinthe to a golden, creamy white. The Absinthe Romans 55 was a limited edition, these are the last available bottles of the 2019 bottling, a real collector's item. A rounded and refreshing absinthe with a light note of licorice and caramel on the finish.

Absinthe Holy Spirit FDC

Holy Spirit FDC absinthe is made starting from a sugar cane/beetroot base and produced with 8 botanical substances, 5 for distillation, Anise, Florence Fennel, Calamus Root, Artemisia Absintium and Artemisia atborescens harvested locally and 4 for the color, Artemisia Absinthiu,, Artemisia Pontica, Hyssop and Melissa. This Absinthe is based on a French recipe from 1855, which would be very close to the Absinthe served by the distiller Golani's great-grandmother in her Estaminet in northern France. Rests in barrels for 120 days. Without added colorings and unfiltered. It is drunk in the traditional way by pouring 1 to 5 parts of ice water (sugar cube optional) until it becomes cloudy.
