Absinthe La Verte 72% is colored by macerating the plants a second time after distillation to extract the chlorophyll. This coloring gives it a more herbaceous note and aromas of undergrowth and fern. This absinthe remains sweet for a green absinthe, with a very slight bitterness and an intense herbaceous aroma carried over by the colouring. The Bourgeois spouses cultivate almost all the plants (except green anise) in their own organic garden, paying great attention to the quality of the chosen plants.
